Summer Will Be Gone Soon: Coca-Cola Cake

Here's a recipe for your Tuesday evening. This came from my late great-aunt, but I have seen variations of it all over the Internetz (1). (1) UrbanDictionary.com says the definition of "Internetz" is "something given to people as a reward on the internet." Consider this recipe your reward. And for future posts "Internetz" is interchangeable with "Internet."

Any how...on to the recipe. Summer will be gone before you know it, so make this little ditty before the weather cools off. You'll thank me later.

INGREDIENTS

Cake

  • 2 cups unsifted flour
  • 2 cups sugar
  • 2 sticks butter
  • 2 tbs. cocoa
  • 1 cup cola
  • 1/2 cup buttermilk
  • 1 tsp. baking soda
  • 2 eggs
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 1 1/2 cups mini-marshmallows

Icing

  • 1/2 cup butter
  • 2 tbs. coca
  • 6 tbs. cola
  • 1 box powdered sugar
  • 1 cup nuts (chopped)
  • 1 tsp. vanilla

DIRECTIONS

Cake

Sift flour and sugar in bowl. Heat butter, coca and cola to boiling point. Pour over flour and sugar mixture. Add rest of the ingredients except marshmallows. Beat until smooth. Add marshmallows. Batter will be thin and marshamallows will float to top. Bake in oblong pan, 30-35 minutes at 350 degrees.

Icing

Heat butter, coca and cola to boiling point, pour over sugar, beat and add nuts and vanilla. Ice cake while hot.
